The strip steak is the other side of the T-bone from the filet and boasts a delicious flavor and exceptional tenderness, especially after having been dry aged 21 days. Our favorite way to enjoy these steaks is to sear them, slow cook to taste and cover with a brandy, butter and mushroom sauce.
