Our favorite cut!   As with all of our cuts, these filets have been dry aged for 21 days making them tender as can be.  Our favorite way to enjoy filets is to sear them on both sides, coat with black pepper corns, sauteé with a little red wine and then slow cook to taste. This is home dining at its finest.
